Saturday Morning: Pecan Pie Muffins







I love pecan pie and I love muffins so when I saw the recipe this morning at The Tasty Kitchen I hopped up and made it.  The photos on the Tasty Kitchen website are much better than mine so check them out.  I made a couple of small changes and it was awesome.  My photo is above and at the end of the final product.

Ingredients

  • 1 cup packed brown sugar (I used Dark instead of light)
  • ½ cup all-purpose flour
  • ½ cup chopped pecans
  • ½ cup chopped walnuts
  • ½ tsp cinnamon  
  • ⅔ cup melted salted butter
  • 2 whole eggs, beaten


Preparation Instructions

Preheat oven 350 F.

Grease your muffin pan with Crisco or butter. I used butter because that's the way I roll.

In a medium bowl, stir together brown sugar, flour, pecans, walnuts and cinnamon. In a separate bowl, beat the melted butter and eggs together. Stir into the dry ingredients just until combined. Spoon 1/3 cup of the batter into the prepared muffin cups. Cups should be about 2/3 full. Bake for 20 to 25 minutes. Cool on a wire rack when done.
